Gourmet Chermoula
"North African Best Hot Taste". Dust over chicken, meat or fish. Bake, stir fry or grill. Our first spice in the series of "Tagine" North African Seasoning. For a quick recipe, slice some beef or chicken in very thin strips, about 10 cm long by 1 cm wide. Heat sufficient oil in a frying pan, add the meat and sprinkle with Whittingtons Gourmet Chermoula. Stir fry the meat for a few minutes. Remove from heat, leave for 4 minutes. Add to mashed potatoes, rice or pasta previously cooked. Chermoula is spicy and hot, a unique taste for the connoisseur palate.

Gourmet Chicken Tandoori Rub
This mixture is based on the mixes used in Tandoori cooking. Tandoori refers to a clay oven called a Tandoor where whole or large pieces of chicken are cooked. We calle it Tandoori chicken but, we use it on Lamb, Beef, Pork and Seafood, a dash on steamed veggies gives a great flavour. Brush the meats with olive oil, than sprinkle the Tandoori spice all over, refrigerate for 20 minutes, than pan fry. Delicious.

Gourmet Harissa
North African Seasoning. Make your Moroccan Casserole with this spice. Use on chicken, meat or fish. Our second spice in the North African  "Tagine " series. Hot Gourmet Harissa is an excellent spice to use on BBQ. In a bowl add a tablespoon of Whittingtons Gourmet Harissa, 2 tablespoons of balsamic vinegar, 2 tablespoons of extra virgin olive oil and gently combine all the ingredients. Brush over lamb chops or chicken breasts, leave the meat in the fridge for 20 minutes or longer, before cooking on the BBQ.  Serve with couscous, or rice  and  Greek style yoghurt.

Gourmet Lightly Roasted Dukkah
A Nut Free Dukkah, from an Original Middle Eastern  Recipe.  Use as a dipping sauce. Add two tablespoons of Whittingtons Premium Dukkah to a small dish. In a  separate  small dish add 4 to 5 tablespoons of extra virgin olive oil and 1 tablespoon of good quality balsamic vinegar. Slice sufficient Turkish style flat bread in strips of 1.5 cm wide and 7 cm long. Dip the bread in olive oil, than into the dukkah. Use the dukkah on chicken,  first brush the chicken pieces with oil  then coat with dukkah and bake to cook.

We have selected all the premium spices to create this hot and delicious mix. Use to make your own flavoured Piri Piri Oil, add 4 tablespoons of Whittingtons  Premium Piri  Piri to 500ml Extra Virgin Olive Oil. Leave the oil to  infuse for  a minimum of 1 hour. Your new spicy oil will keep  for up to 2 years or the life of the olive oil that you are using. Use the spice directly to stir fry add 1 teaspoon for an average 4 servings of fish, meat, chicken or lamb.
